I love coconut, and all things coconut! It is easy to buy raw coconut here, and not so easy to find unsweetened packaged coconut - so I decided to just make some of my own; roasted in the oven!

I wanted to use the coconut in another batch of granola, and I love the crunch of the bigger peices of coconut.
I wanted this batch to be a bit sweeter than the last batch. Catch here is, I am trying to stay away from all things processed, so sugars are out.
I decided to make my own date sugar - so I dried some dates in the oven, then ground them up in the blender, and voila: date sugar!
YUM!
This all made for a very yummy batch of,
G'sawy Granola Cereal
whole, raw, rolled oats
raisins, dried blueberries (unsweetened)
almonds, hazelnuts, brazil nuts, toasted coconut chunks, cashews, (all chopped)
pumpkin seeds, sesame seeds, linseeds
coconut oil (don't know how to eliminate this; not sure what I can use in place of it...)
cinnamon, cloves (fresh ground), vanilla
perfectly baked in a low temp oven until beautifully browned, (stirring often).

Then I decided to whip up some chocolate pudding for Dean; again, unprocessed, natural ingredients.
I made some changes to the online recipe, here's what I did:
G'sawy Avo-choco-pudding
one avocado
8 raw pitted dates
1 tablespoon vanilla
4.5 tablespoons coco powder
1/2 + 1 tablespoon water
two teaspoons of date sugar, (added after everything is blended up)
Blend everything except the date sugar in the blender until beautifully smooth. In a bowl add the date sugar, mix well. Enjoy.
YUM!
Then, I took a look at the head of cabbage in the fridge... it was in it's last days, barely. Time to do something with it! So I decided to try my hand at that "Alfredo Sauce".
Again, I wanted to stay as natural, and unprocessed as I could, so I had to improvise a bit; here's mine:
G'sawy Cab-fredo Sauce
1 med head of cabbage
4 cups water
2 tsp veggie bouillon
3 medium cloves garlic
(boil together until cabbage is soft)
Put into blender (with half of the water, adding more if needed) and blend, add
salt and pepper to taste
YUM!
I am going to enjoy the Cab-fredo sauce on some TruRoots sprouted bean trio I made yesterday, with a big plate of salad!
